American meatloaf -
1 kg beef mince 1 egg 2 slices of fresh bread, crumbled 1/2 400gm tin of tomato puree c. 1/2 tsp salt lots of ground black pepper good pinch oregano good pinch thyme - or whatever herbs you like
First grease an oven dish and put the oven on to heat to 180C.
Put all the ingredients in a big bowl and mix them well with your hands (my favourite part of the recipe). Form them into a free-standing loaf in the oven dish. Lay 4-5 slices of bacon on top and round the sides of the loaf. Slather the outside with the other half tin of tomato puree. Back for c. 1 hour, till it looks done.
NZ meatloaf - use less mince, add sausage meat and mixed veges.
French meatloaf - cook it in a loaf tin lined with bacon, and put in minced organ meats (I haven't tried this but I think this is the theory).

you can also put the meatloaf into bell peppers?[ they might be called something different in australia] and cook them in a shallow pan. stuffed peppers are my favorite. you can also mix in white rice and roll into balls. this is called, porcupine meatballs. american meatloaf is also covered with ketchup before you cook it.
